The collection includes small amounts of biographical information, correspondence, speech manuscripts, notes on the history of women's education, ISU home economics history, and materials on the National School Lunch Workshop held at Iowa State in 1949. Most of the speech manuscripts document Nelson's concerns in home economics education, nutrition and dietetics work.

Iowa State University first established coursework in "domestic economy" in 1872. The first instructor was Mary B. Welch, wife of University President, Adonijah Welch. Iowa State College Division of Home Economics Dean, 1944-1952, food nutritionist. Mabel P. Nelson began at Iowa State College in 1923 as an associate professor of dietetics and experimental cookery. Nelson earned a Ph. D. in physiological chemistry from Yale University immediately prior to employment at Iowa State. From 1926 to 1944 Nelson served as the head of the Food and Nutrition Dept.
