Iowa State College Division of Home Economics Dean, 1944-1952, food nutritionist. Mabel P. Nelson began at Iowa State College in 1923 as an associate professor of dietetics and experimental cookery. Nelson earned a Ph. D. in physiological chemistry from Yale University immediately prior to employment at Iowa State. From 1926 to 1944 Nelson served as the head of the Food and Nutrition Dept. She was well known for her appearances on the "Homemaker's Half-Hour on WOI Radio. Nelson served as the chairperson of the Iowa State Nutrition Council during World War II. In her professional activities in the American Dietetic Association and the American Home Economics Association, Mabel Nelson contributed to setting standards for professional workers in dietetics.
