In this interview, Mr. Van Eenwyk discusses his experiences with the New York State food processing industry. Topics include: his education and training; his recollection of his father Frank Van Eenwyk, particularly his conbtributions to the Clapp Baby Food Company and his influence on the New York State canning industry; labor problems at canneries, including the effect of automation on workers; his relationships with growers; obtaining and using credit; the effect of crop failures and low quality raw products on canned goods; and the impact of cooperatives on the New York State canning industry; and the development of the apple sauce derby.
