This interview covers George Olney's personal history and observations of the processing equipment trade and the New York State canning industry: description of in-house can making during the early 1900's; technological developments associated with vegetable processing, especially corn, peas, beets, and beans; effect of improved transportation on increasing the distance between raw products and processing plants; effect of child labor laws and World War II on production and processing; shift of processing industry from eastern to western New York and from New York to the midwest and west; canning onions in New York State; changes in warehouse procedure; and innovations and trade in food processing machinery.
