Organizer and head of the Department of Domestic Economy at Iowa State University (1875-1883). Her husband was Adonijah Welch, first president of the University. She started her career at Iowa State in 1871 as a lecturer for domestic science. In 1872 she attended schools around the world to prepare herself for the task of organizing the Dept. of Domestic Economy. She wrote a cookbook in 1884. From the description of Papers, 1858-1979.
