Research chemist. Evelyn J. Weber (b. 1928), is a native of Shelby County, Illinois. She graduated from the University of Illinois with a B.S.(1953) in Chemistry and received a Ph. D in Biochemistry (1961) from Iowa State University. From 1965 through 1987 she was a Professor of Plant Biochemistry in the Agronomy Department at the University of Illinois and a research chemist for the Agricultural Research Service of the United States Department of Agriculture.

Her research focused on plant metabolism and the development of high-oil corn. She has authored numerous articles on her research specialty, is a member of several societies, such as the American Chemical Society and the American Oil Chemists' Society, and is a Fellow of the American Institute of Chemists. She is currently a Professor Emerita in the Agronomy Department at the University of Illinois.
