Willes Combs was appointed to the University of Minnesota's Dept. of Dairy Husbandry in 1924 and worked there until his death in 1959. Among his contributions to the Minnesota dairy industry was his work in support of the blue cheese industry. He also worked in the development of Nuworld cheese.

Willes Combs was a faculty member in the Dairy Husbandry Department at the University of Minnesota from 1924 until his death in 1959. He was an esteemed educator and researcher in the field of dairy science, and was a member of the honor societies Alpha Zeta, Gamma Sigma Delta, Sigma Xi and the American Dairy Science Association. Combs was instrumental in the founding of the Minnesota Dairy Industry Committee in 1937, one of the original units of the American Dairy Association, which he was secretary of from 1939-1959.
