Henry R. Peterson was the owner of Peterson Truck Farms, a successful vegetable farm in Clay County. The Peterson Farms was one of the most productive truck farms in Minnesota, being a leading producer of onions, potatoes, and other vegetable crops. Peterson contributed to agricultural research, particularly in new breeds of seed potatoes. He was also active in businesses and civic organizations in the city of Moorhead.
