Born and raised in San Antonio, Texas, Ernst Schuchard was the son of Hermann and Mathilda Guenther Schuchard.

After receiving an engineering degree and serving in World War I, Schuchard began work as an engineer with Pioneer Flour Mills in San Antonio, the business founded by his grandfather. He began making scale drawings of the missions of San Antonio, and in the 1930s assisted in the reconstruction of the mill at Mission San Jose. He also researched the painted decoration of the mission buildings, and in 1949 he repainted a section of the designs on the church at San Jose. Another historical research project was Schuchard's compilation of a centennial history of Pioneer Flour Mills, which was published in 1951.
