The notion of establishing an international organization of food scientists and technologists dedicated to the nutritional needs of the people of the world was explored during the First International Congress of Food Science and Technology held in London in 1962 . The President of the Congress was Lord Joseph Rank ( 1888-1972 ), a flour miller among other things, who in his presidential address emphasized the importance of international collaboration. From this Congress emerged an International Committee of Food Science and Technology. The work of this committee culminated in the founding of the International Union of Food Science and Technology (IUFOST) during the Third International Congress of Food Science and Technology convened in 1970 in Washington, DC, USA.

IUFOST is a voluntary, non-profit association of national food science organizations linking the world's best food scientists and technologists, renowned for its congresses, conferences and symposia. IUFOST's objectives focus on international co-operation, the exchange of scientific and technical information, the advancement of technology in food production, the encouragement of education and training in food science and technology, as well as the promotion of professionalism and professional organization among food scientists and technologists.
