The Waiters and Bartenders National Union was founded in 1891 and affiliated with the American Federation of Labor. The name was changed in 1898 to Hotel and Restaurant Employees International Alliance and Bartenders International League of America. Local 237 was founded in 1920 and represented cooks, waiters, maids, bellboys, and other workers in Pittsburgh's hotels. In 1947, the name was changed again to Hotel and Restaurant Employees and Bartenders International Union. The union developed into UNITE HERE, which represents hospitality, airport, laundry, food service, gaming, and textile workers in the United States and Canada. The Pittsburgh chapter is now Local 57.
