Capt. Henry B. Fitch was a U.S. army officer of the 75th New York Infantry Regiment during the Civil War. He operated Hermitage Plantation in St. Charles Parish, La., when the area was occupied during the Civil War. The plantation belonged to Pierre Adolphe Rost (1797-1868), a French immigrant, Louisiana judge, and Confederate diplomat.
